Savory Rice-Nut Casserole

Ingredients
3 cups cooked brown rice
2 cups mozzarella cheese, shredded (8 ounces)
1/2 cup sun-dried marinated tomatoes, drained and chopped
4 eggs, lightly beaten
1 medium onion, chopped
1/2 cup Italian-style breadcrumbs
1/4 cup walnuts, chopped
1/4 cup sunflower nuts
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
Combine all ingredients and pack into greased casserole dish. Bake in a 350 degrees oven for 40 to 45 minutes or until firm. Let cool for 10 minutes, then serve. Makes 6 servings.
