Savory Onion and Sausage Breakfast Muffins

Ingredients

2 cups all-purpose flour
1 medium sweet or yellow onion, diced
1/3 cup shredded cheddar cheese
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup butter, melted and cooled
1 cup milk
1 large egg
1/4 pound sausage, browned

Preparation

Preheat the oven to 425 degrees Fahrenheit. Spray a 6-slot jumbo muffin tin with nonstick cooking spray.

Add the flour to a large bowl. Reserve 2 tablespoons of the diced onion for topping. Toss in the remaining diced onion and cheddar cheese until evenly coated with flour. Stir in the baking powder, salt, and black pepper.

Pour in the melted butter and stir lightly. Whisk the egg into the milk until fully blended. Pour the milk and egg into the bowl and stir until a soft batter forms.

Divide the batter evenly among the 6 muffin slots. Divide the browned sausage into 6 portions and press one portion into the top of each muffin. Sprinkle the reserved diced onion evenly over the muffins.

Bake for 25 to 30 minutes until the muffins are browned and baked through. Serves 6.
