A savory twist on a breakfast classic. These pancakes combine boxed mix with smoky bacon, sweet onions, and cheddar cheese. Topped with a fried egg and a sprinkle of red onion, they make a hearty and easy-to-prepare meal.

Ingredients

4 ounces sliced bacon
1 small onion, diced
1 cup boxed pancake mix
⅔ cup water
⅔ cup shredded cheddar cheese
¼ teaspoon salt
¼ teaspoon ground black pepper
3 to 4 large eggs, cooked to your preference
3 tablespoons minced red onion, for garnish

Preparation

Cook the Bacon

Cook the bacon in a large skillet over medium-high heat until crisp enough to crumble, about 10 minutes. Transfer to a paper towel-lined plate to cool. Once cool, crumble the bacon. Wipe out the skillet, leaving only a thin layer of bacon grease in the bottom.

Make the Pancake Batter

Combine the diced onion, pancake mix, and water in a medium bowl. Stir until smooth. Stir in the cheddar cheese, salt, pepper, and crumbled bacon.

Cook the Pancakes

Pour ¼ cup of batter into the skillet for each pancake, cooking 2 to 3 at a time without overcrowding. Cook 3 to 4 minutes on each side until golden brown and cooked through. Transfer the pancakes to a plate and continue to cook the remaining batter.

Top and Serve

Fry the eggs to your liking (sunny-side-up, over-easy, or well done). Top the pancakes with a fried egg. Garnish with minced red onion and serve warm.
