Sauteed Mushroom And Onion Salsa
Ingredients
1 Tablespoon Olive Oil
1 1/2 Teaspoons Butter
2 White Onions
4 Ounces Button Mushrooms
2 Garlic Cloves
4 Ounces Wild Mushroom Mix (chanterelles, cremini, oysters, shitake, etc.)
5 Roma Tomatoes
1 Jalapeno Pepper
1/2 Teaspoons each, Ground Cumin, Ground Pepper, Salt<
1 Tablespoon + ½ teaspoons Cilantro, Chopped
1 Tablespoon, + 1/2 Teaspoons Lemon Juice
Makes 4 cups
Directions
Heat pan with olive oil and butter. Add onions and garlic over medium heat and sauté until onion and garlic are golden. Add mushrooms and sweat until they start releasing moisture. When the mushrooms start to brown, add tomatoes, jalapeno, cumin, pepper and salt. Season with salt and pepper and cook until mixture is heated through. Take off heat and add cilantro and lemon juice. Stir and serve warm.
