Onion, Prosciutto & Melon Salad with Edible Flowers

Ingredients
1 medium cantaloupe
1 small white onion, sliced
1 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
Pinch salt
Pinch ground black pepper
3 ounces sliced prosciutto, torn or chopped
2 tablespoons edible flowers such as society garlic or cilantro flowers
Preparation
Cut the melon into sections, remove the seeds and rind. Use a vegetable peeler to cut the melon into ribbons. Alternatively, you can dice or chop the melon. Add the melon and onion to a large bowl.
Whisk together the olive oil, lemon juice, honey, salt, and pepper in a small bowl until a smooth dressing forms. Pour the dressing over the melon and onions and toss to coat all ingredients.
Transfer the dressed melon and onions to a serving bowl. Top with pieces of prosciutto and edible flowers. Serve right away. Serves 6-8.
