Microwave Chiles Rellenos Wraps

Ingredients
1-1/2 cups shredded cheddar cheese
1/2 cup low-fat ricotta cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1-1/2 cups chopped sweet onion
1 tablespoon vegetable oil
1 cup canned pinto beans, drained
1 cup chopped tomatoes, drained
1 cup olives, coarsely chopped
Hot sauce
4 burrito-size flour tortillas
1 can (4 ounces) whole green chiles
Directions
Mix cheeses, garlic powder and salt. Sauté onion in oil until tender; add beans, tomatoes and olives. Cook, stirring a few minutes until hot. Place tortillas in plastic bag and microwave at full power for 45 seconds to soften. For each wrap, spread out warm tortilla on counter. Portion 1/4 bean mixture into center. Top with 1/4 cheese mixture and 1/4 chiles. Fold two sides of the tortilla over filling, then wrap tortilla around. Place wraps seam down on microwave safe platter. Microwave uncovered 5 minutes or until warmed (with 12-inch tortillas, increase time slightly). Makes 4 wraps.
