Fast Skillet Onion Mac & Cheese

Ingredients
- 8 oz macaroni (or any small pasta)
- 2 tbsp butter
- 1 medium onion, diced (or thinly sliced for a sweeter bite)
- 2 tbsp cream cheese (makes it extra creamy fast)
- 1 cup shredded cheddar cheese
- ½ cup milk (or more if you like it saucier)
- Salt & pepper to taste
Directions
Boil pasta in salted water according to package directions. Drain, reserving about ¼ cup of pasta water. While pasta cooks, melt butter in a large skillet over medium heat. Add onion and cook 3–5 minutes until soft and slightly golden. Lower heat to medium-low. Add cream cheese, milk, and cheddar. Stir until melted and smooth. Add a splash of pasta water if too thick. Toss pasta into the skillet, coating well. Season with salt and pepper. Serve hot. 4 servings
