Curry Onion Quick Bread
This simple bread is full of flavor thanks to curry powder and onions. You can quickly stir it together and bake it fresh to serve alongside your favorite soup.

Ingredients
2 cups all-purpose flour (240 grams)
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
1 ½ tablespoons mild or hot curry powder
1 teaspoon fine sea salt
½ teaspoon garlic powder
1 medium white onion, chopped (1 cup)
2 large eggs, room temperature
¾ cup low-fat buttermilk
¼ cup unsalted butter, melted
8 to 10 small slices of white onion for topping
Preparation
Preheat the oven to 375 degrees F. Grease a 9-by-5-inch loaf pan with butter.
Stir together the flour, sugar, baking powder, and baking soda in a large bowl. Add the curry powder, salt, and garlic powder. Stir until the seasonings are evenly distributed.
Add the chopped onion and gently toss it in the flour to coat all the pieces.
In a small bowl, whisk together the eggs, buttermilk, and slightly cooled melted butter. Pour the wet ingredients into the dry ingredients. Stir gently just until all ingredients are combined into a batter.
Pour the batter into the prepared loaf pan. Top with slices of onion and gently press them into the batter.
Bake for 35 minutes, until a toothpick inserted into the center of the loaf comes out clean. Let cool for at least 5 minutes before serving warm or at room temperature.
