Caramelized Onion Ricotta Toasts

Ingredients
1 cup ricotta cheese
½ teaspoon lemon zest
¼ teaspoon minced fresh rosemary
¼ teaspoon salt
¼ teaspoon ground black pepper
12 slices baguette, toasted or grilled
¾ cup caramelized onions, warm or room temperature
Lemon zest for garnish
Preparation
Stir together the ricotta, lemon zest, rosemary, salt, and pepper in a small bowl.
Top each slice of baguette with an equal amount of ricotta. Divide the caramelized onions, piling an equal amount on each toast.
Garnish with fresh lemon zest and serve. Makes 12 servings.
