Caramelized Onion & Barbecue Chicken Sandwiches

Ingredients
1 teaspoon olive oil¼ cup finely diced white onion
1 garlic clove, minced
1 jar (about 19-ounces) barbecue sauce
3 cups leftover shredded rotisserie chicken
4 brioche buns
1 cup caramelized onions, warm
Other toppings, if desired: diced white onion, sliced pickles
Preparation
Heat the olive oil over medium-high in a large saucepan. Add the onion, reduce heat to medium, and cook for 3 minutes. Stir in the garlic and cook for 30 seconds.
Turn the heat to low. Pour in the sauce. Simmer for 5 minutes.
Add the chicken. Stir to coat in the sauce and simmer for 5 minutes until warmed through.
To serve, divide the chicken evenly over the bottom portion of the 4 buns. Top each with an equal amount of caramelized onions. Add any additional toppings and the top bun, then serve. Makes 4 servings.
