Onion and Turkey Lime Salad
1/4 cup olive oil
Sauté onions and peppers in oil until tender. Add in the turkey and cook until done. Add in the lime zest, juice, garlic, cumin, red pepper flakes and cook through for 2-3 minutes. Arrange 2 cups lettuce on (4) individual plates and add on turkey mixture. Garnish with cilantro, sour cream and more lime if desired.
