Red Onion, Tropical Fruit and Avocado Salsa
2 avocados, peeled and diced small
½ mango, peeled and diced small
½ cup diced fresh pineapple, diced small
½ cup papaya, diced small
½ cup tomato, diced small
1 red onion, chopped small
½ red serrano pepper, minced
½ tsp minced garlic
¼ tsp salt
¼ tsp ground cumin
Pinch ground pepper
(Makes 4 cups)
In bowl, combine avocados, mango, pineapple, papaya, tomato, cilantro, onion, Serrano pepper, garlic, salt, cumin, pepper and juice from 1/2 a lime. Toss gently; rest for at least 30 minutes to allow flavors to blend. Add additional lime juice to taste.
