Pineapple Mint Onion Stacks

Description
Perfect for snacking or as a topping on sandwiches this combination is really sweet!
Ingredients
2-3 medium onions, cut into 1/4 to 1/2-inch thick slices
1 pineapple cut into 1/2-inch thick slices
sea salt
fresh mint sprigs
Directions
As a snack: Assemble ingredients into stacks starting with a pineapple slice as the base. Top with a slice of onion (mixed colors, or whatever you have on hand), sea salt, and a sprig of mint.
If preferred, you can chop all the ingredients into a salsa, with a squeeze of lime to taste.
On the grill/sauteed: brush slices of onion and pineapple with oil and grill till tender.
Season with sea salt, top with fresh mint to eat as a snack, or chop and use as a pizza topping, burger condiment, or brioche appetizer.
