Stout Onion Soup

Serves 8 ppl
Ingredients
Vegetable oil, 2 oz
Yellow onions, sliced, 5 ea
Chicken stock, 2 qts
Veal demi glace, 2 cups
Stout beer, 1 cup
Fresh thyme Leaves, chopped, 1 oz chopped
Garlic, minced , 1 teaspoon
Salt and white pepper
Directions
Place a large pot on the stove over medium heat
Caramelize the onions with vegetable oil for a minimum of 1hour
Add the stout, chicken stock, demi glace, garlic and thyme.
Simmer for 2 hours
Skim oil off the top
Place in a bakeable crock and top with crostini and white cheddar
Broil in oven for 2 minutes or until cheese is brown and bubbly
Crostini
16 Slices French Baguette/ Sliced ½ in Thick – 2 per bowl
2 Cups White cheddar Shredded
Once Soup is hot, place slices in the soup and cover with 2 oz of cheese on top and broil
