Stir-Fry Onion Ramen

Ingredients
- 2 packs ramen noodles (discard seasoning)
- 1 large yellow onion, diced or sliced
- 1 cup mixed veggies (optional)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (or extra soy if vegetarian)
- 1 tbsp butter or oil
Directions
Boil ramen just until soft, then drain. In a skillet, sauté onions in butter/oil until soft and golden. Add veggies if using, stir-fry 2 minutes. Toss in noodles, soy sauce, and oyster sauce. Serve hot — extra good with sesame seeds on top
Per serving: 570 calories; 13.35 g protein; 24 g fat; 75 g carbohydrate; 8 g fiber; 400 mg sodium.
