Portuguese Sausage Stew

1 pound spicy Italian sausage
1 pound mild Italian sausage
1 pound sliced yellow onion
3-1/2 cups potatoes, cut into 1/2-inch cubes (1 pound)
2 cups sliced celery
2 cups sliced zucchini
1 can (l pound 12 ounces) whole peeled tomatoes, undrained
1 can (15 ounces) red kidney beans, undrained
1 quart water
1 tablespoon minced garlic
1 teaspoon anise seed, crushed
Remove sausage meat from casings. Crumble and sauté sausage until cooked. Drain off fat. Combine sausage and all remaining ingredients in kettle. Cover, bring to boil, cover and simmer for 45 minutes or until potatoes are tender and flavors well blended.
Makes 6 2-1/3 cup servings (3-1/2 quarts total).
Per serving: 556 calories, 26 g protein, 40 g fat, 22 g carbohydrates, 3.7 g fiber, 1107 mg sodium.
