1 pound Red onion, sliced 1/2-inch thick, grilled
1 pound Yellow onion, sliced 1/2-inch thick, grilled
1-1/2 pounds Red bell pepper, cut into wedges, grilled
12 Pita bread pockets, whole wheat, cut in half
24 leaves Romaine lettuce
48 Tomato, slices
12 ounces Part skim, mozzarella cheese, sliced thin
Grill chicken, onion slices, bell peppers.
For each sandwich fill 1/2 pita bread with grilled chicken breast, sliced grilled onions, grilled red pepper, cheese, lettuce and tomato.
