Alaskan White Chili
 

Ingredients:
1 lb. Great Northern beans, rinsed
6-8 cups chicken broth
2 cloves garlic, minced
2 large onions, chopped, divided
1 tablespoon extra virgin olive oil
1 teaspoon ground cumin
1 teaspoon ground oregano
1/2 teaspoon ground red pepper
2 cups uncooked chicken breast, cubed
8 ounces canned green chilies, chopped
sour cream
Jack cheese, shredded
prepared salsa

Directions:
Combine the beans, 6 cups of chicken broth, garlic and 1 onion in a skillet or ovenproof stockpot. Cover and bring to a boil, then simmer for 1 hour. Heat the olive oil in a large skillet and add 1 onion. Add the cumin, oregano and red pepper. Add this onion/spice mixture to the beans. Cover and cook 1-11/2 hours, or until the beans are very tender. Add additional chicken broth, if needed and stir occasionally. Add the chicken and the green chilies and cook for an additional 15 minutes. To serve, arrange sour cream, Jack cheese and salsa at the table and pass with bowls of the chili. Serves 4.
