Ingredients:
6 sweet onions
1/4 cup extra virgin olive oil
2 tablespoons fresh thyme, finely minced
1 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
Peel each onion. Cut into slices about 1/4-inch thick. Do not separate the rings in each slice. Place the whole slices on a flat surface and drizzle each with the olive oil. Sprinkle the thyme, salt and pepper over each. Grill over medium-high heat for about 2 minutes on each side, turning the slices carefully with a large spatula. Serves 6 to 8.
