Irish Supper Soup
 

Ingredients:
1 lb. smoked ham, chopped
1 tablespoon vegetable oil
6 baking potatoes, peeled and cut into cubes
2 large onions, thinly sliced
1 carrot, peeled and grated
10 cups beef broth
2 cups water
2 teaspoons salt
1 teaspoon black pepper
1/2 head cabbage, shredded
1/2 cup fresh parsley, chopped
Irish soda bread

Directions:
Place the ham in a large stockpot and add the oil. Heat to medium and cook for 2 minutes. Add the potatoes and cook for 2 minutes. Add the onions, carrot, beef broth, water, salt and pepper and simmer for 45 minutes, covered. Add the cabbage and parsley and simmer for 10 minutes. Serve with soda bread to soak up the soup broth. Serves 4.
