Ingredients:
12 inch prepared pizza shell (or homemade pizza dough, if desired)
1 cup prepared barbecue sauce
1/2 lb. deli-style smoked chicken, cut into thin slices
1 cup purple onion, thinly sliced
2 tablespoons fresh parsley, finely minced
3 cups mozzarella cheese, shredded
Directions:
Place the pizza shell or prepared dough on a baking sheet that has been sprinkled with cornmeal. Heat the oven to 400°F. Spread the barbeque sauce on the pizza shell and layer the smoked chicken over the sauce. Scatter the onion rings over the chicken and sprinkle the parsley on top of the onion. Spread the mozzarella cheese over all. Bake the pizza for 12-15 minutes, or until the cheese is melted and the pizza is bubbly. Serves 6.
